Delicious Okra Tomato Stew

Okra, commonly known as ladies fingers, is an important vegetable in African cooking and plays a prominent role in African cuisines. Of all the native food crops in Africa, the Okra is one of the most prolific across the continent. Try this delicious okra tomato stew any cool, Fall evening.   • 1 - 14 ounce package smoked turkey sausage sliced in rounds

  • 2 tablespoons cooking oil

  • 1 cup chopped green spring onion

  • 1 chopped green pepper

  • 1-14 ounce can diced tomatoes

  • 2 cups chopped fresh okra

  • 1 cup fresh, canned or frozen corn

  • 1- 1/4 teaspoon salt

  • 2 teaspoons light brown sugar

  • 1/2 teaspoon paprika

  • 1 cup fresh zucchini chopped

  • 1 teaspoon minced garlic

  • 1/2 teaspoon Cajun seasoning

  • Several drops hot sauce


  • In a large pot, brown sausage, green onion and green pepper in cooking oil.

  • Add tomatoes, corn, okra, zucchini, garlic and season.

  • Let simmer covered for 15-20 minutes until okra is tender.

  • Serve over rice and enjoy!
